Fashionoffice healthy diet recipe: Mangold soup
Recently, Fashionoffice published the first of two mangold (or chard) recipes. A friend of Fashionoffice sent the recipes for the healthy diet; mangold is rich on vitamins and minerals. The salad is great as side-dish for fish, meat, or can be served as snack in-between; it's made of the white stalks. Now on view on this page is the soup from the green leaves.
Soup recipe:
- Separate the green leaves from the white stalks
- Cut the green leaves into small pieces
- Peel 2 potatoes and cut them into slices
- Glaze 1 onion in butter and olive oil
- Add the green leaf and potatoe pieces
- Pour 1/2 liter beef broth
- Add salt, pepper and (a small amount of) vinegar
- Boil it around 20 minutes
- Flavor it with nutmeg
- Puree the soup with a hand blender
