 Fashion.at tip for a recipe of the season: Peach dumplings
  
Dishes made of regional fruits of the season like apricots (July, August) or  peaches (July - September)  are every year culinary highlights at restaurants in Austria. Not every recipe is practical for being prepared at the home cuisine.  But it's simple to make  dumplings. Fashion.at's favorite  recipes for peach and apricot dumplings are almost the same. Apricots have the benefit that the stone can be removed easily and replaced by marzipan; in the combination apricots & marzipan, the breadcrumbs covering tastes better in a refined mix with grated walnuts.

The recipe originates from the good spirit of the Fashion.at  kitchen. It's a traditional  recipe used over generations with roots in bohemian cuisine. 
 The dough:
 300 g low-fat quark
 200 g flour
 1 egg
 70 g butter
 a pinch of salt
 
 The crumb covering:
 1 teaspoon butter
 200 gr breadcrumbs
 
 Preparation:
 
        
          Mix the ingredients of the dough and partition it for around 10 peaches (depends on the size of the fruits). Put flour on the table; roll each  dough partition out and wrap the  peach into it without leaving a hole or an air cushion.
        
          Heat water (with a small amount of salt) in a vessel; put the dumplings into the boiling water and let it simmer for around 10 minutes.
          In the meanwhile, roast the breadcrumbs in the butter.
        
          Roll the dumplings in the crumbs until they are covered.
          
         Tip: Accompany the dumplings with a fruit (like blueberries) yoghurt and a glass of cold milk.  |
